Aioli Recipe: Creamy and Garlicky

- 2 large egg yolks
- 2 –3 garlic cloves minced
- 1 tbsp fresh lemon juice
- ½ tsp kosher salt
- ¼ tsp Dijon mustard optional
- ¾ cup extra-virgin olive oil
- ¼ cup neutral oil
- Optional: Fresh parsley lemon zest
- Suggested Pairings: White wine crudités
Blend egg yolks, garlic, lemon juice, salt, and mustard until smooth.
Slowly add oils, blending until thick and creamy.
Adjust consistency with water; taste and adjust.
Chill 30 min (optional).
Serve in a white ceramic ramekin with parsley, zest, wine, and crudités.
- Add oil slowly to prevent breaking.
- Store in fridge for 5 days; do not freeze.
