- 1 lb medium shrimp peeled, tails on
- ½ cup flour
- ½ cup panko breadcrumbs
- ¼ cup cornmeal
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika optional
- 1 large egg
- ¼ cup buttermilk
- Cooking spray
- Optional: Lemon slices parsley

Pat shrimp dry; prepare flour, egg-buttermilk, panko-cornmeal stations.
Coat shrimp: flour, egg, then panko mix.
