Ingredients
  

  • 1 ½ lbs baby potatoes Yukon Gold or red
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1 tbsp unsalted butter melted
  • Optional: Fresh parsley chives
  • Suggested Pairings: Sour cream iced tea

Instructions
 

  • Boil potatoes in salted water for 15–20 minutes until tender; drain.
  • Mix olive oil, salt, pepper, garlic powder, and rosemary; taste and adjust the seasoning.
  • Preheat air fryer to 400°F. Smash potatoes to 1/2-inch thick.
  • Brush with oil mixture and butter; air fry for 12–15 minutes, flipping halfway, until crispy.
  • Serve on a white ceramic platter with parsley, sour cream, and tea.
