Ingredients
Crust:
2 ½

all-purpose flour

kosher salt

granulated sugar

2 sticks unsalted butter, cold and cut into small cubes

Filling:

medium tart apples
e.g., Granny Smith or Honeycrisp, about 6 cups sliced

granulated sugar

all-purpose flour

tbsp
lemon juice

tsp
ground cinnamon

ground nutmeg
Optional: 1/4 tsp ground allspice
for warmth

unsalted butter
cut into small pieces.
Assembly:
1
large egg
beaten with 1 tbsp water (for egg wash)

coarse sugar
e.g., turbinado, for sprinkling.
For Serving:
Optional: Vanilla ice cream
whipped cream, or cheddar cheese slices
Suggested Pairings: Hot coffee
spiced tea, or warm cider
Instructions
Mix flour, salt, sugar; cut in butter; add ice water to form dough. Chill 1 hour.
Toss sliced apples with sugar, flour, lemon juice, spices, salt.
Preheat oven to 400°F. Roll dough; line 9-inch pie dish. Add filling, dot with butter.
Top with second crust; crimp edges, cut vents. Brush with egg wash, sprinkle sugar.
Bake 20 min at 400°F, then 40-50 min at 375°F. Cool 2 hours.
Serve with ice cream, cider.
Notes
Use Granny Smith for tartness.
Store in fridge up to 4 days.
Try caramel variation.
Pair with spiced tea.
