Artisan Bread Recipe: Crusty, Airy

Easy no-knead artisan bread with a crusty exterior and open crumb.

Ingredients
  

  • 3 cups bread flour
  • cups lukewarm water
  • tsp kosher salt
  • ½ tsp active dry yeast

Instructions
 

  • Mix flour, salt, and yeast; add water to the shaggy dough.
  • Cover and rise 12–18 hours.
  • Shape loosely on floured parchment.
  • Second rise 1–2 hours.
  • Bake in preheated Dutch oven at 450°F, covered 30 min.
  • Uncover + bake 15–20 min until deep golden.
  • Cool 1 hour before slicing.

Notes

• Long rise = flavor and holes
• Hot Dutch oven = oven spring
• Weigh flour for consistency
• Try rosemary or olive variation
• Never buy bread again
