Au Jus Recipe: Rich and Savory

Classic Au Jus with rich, savory flavor.

Ingredients
  

  • 2 cups beef broth
  • ½ cup dry red wine or broth
  • 2 tbsp unsalted butter
  • 1 small shallot finely chopped
  • 2 cloves garlic minced
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce optional
  • 1 sprig fresh thyme or 1/4 tsp dried
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • Optional: Fresh thyme sprig
  • Suggested Pairings: Red wine roast beef

Instructions
 

  • Melt butter; sauté shallot, garlic 2–3 min.
  • Add wine, simmer 2 min.
  • Add broth, Worcestershire, soy sauce, thyme, salt, pepper; simmer 10–15 min.
  • Strain, taste, and adjust.
  • Serve in a white ceramic gravy boat with thyme, wine, and roast beef.

Notes

  • Use low-sodium broth for control.
  • Store in fridge for 4 days or freeze for 2 months.
  • Try gluten-free or herb variation.
  • Pair with sandwiches.
