Ingredients
  

  • 8 bone-in skin-on chicken thighs (about 2 lbs)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper optional
  • Optional: Fresh parsley lemon wedges
  • Suggested Pairings: Sparkling water roasted vegetables

Instructions
 

  • Preheat the oven to 400°F; line a baking sheet with parchment.
  • Mix paprika, garlic powder, onion powder, thyme, salt, pepper, and cayenne; taste and adjust.
  • Pat thighs dry; coat with oil and seasoning.
  • Bake skin-side up for 35–40 min until 165°F.
  • Serve on a white ceramic platter with parsley.

  • Pat the chicken dry for crispy skin.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try keto or honey garlic variation.
  • Pair with mashed potatoes.
