lamb loin chops

extra virgin olive oil

fresh lemon juice

garlic cloves

chopped fresh rosemary
or 1 tsp dried

kosher salt

black pepper

smoked paprika

Instructions
Preheat oven to 400°F; line baking sheet with parchment.
Whisk olive oil, lemon juice, garlic, rosemary, salt, pepper, and paprika.
Taste and adjust the marinade.
Marinate lamb chops for 20 minutes.
Bake 8–12 minutes, flipping halfway, until 135°F (medium-rare).
Rest for 5 minutes; serve on a white ceramic platter with parsley or potatoes.
Notes
Use a thermometer for doneness.
Store in the fridge for 3 days or freeze for 2 months.
Try a spicy or balsamic variation.
Pair with asparagus.
