Ingredients
  

  • 8 lamb loin chops 1-inch thick, 4–6 oz each
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 garlic cloves minced
  • 1 tbsp chopped fresh rosemary or 1 tsp dried
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika optional
  • Optional: Rosemary sprigs chopped parsley
  • Suggested Pairings: Red wine sparkling water

Instructions
 

  • Preheat oven to 400°F; line baking sheet with parchment.
  • Whisk olive oil, lemon juice, garlic, rosemary, salt, pepper, and paprika.
  • Taste and adjust the marinade.
  • Marinate lamb chops for 20 minutes.
  • Bake 8–12 minutes, flipping halfway, until 135°F (medium-rare).
  • Rest for 5 minutes; serve on a white ceramic platter with parsley or potatoes.

Notes

  • Use a thermometer for doneness.
  • Store in the fridge for 3 days or freeze for 2 months.
  • Try a spicy or balsamic variation.
