unsalted butter

all-purpose flour

cups
whole milk
warmed
½
tsp
kosher salt

tsp
white pepper
Pinch
of nutmeg
Instructions
Melt butter in a saucepan.
Whisk in flour; cook 2–3 min.
Gradually add warm milk, whisking constantly.
Simmer until thickened.
Season with salt, pepper, and nutmeg.
Use immediately or store.
Notes
• Warm milk = no lumps
• Fresh nutmeg = magic
• Freezes perfectly
