- 2 lbs beef chuck cut into 1.5-inch cubes
- 2 tbsp olive oil
- 4 oz bacon diced
- 1 medium onion diced
- 2 carrots sliced
- 2 garlic cloves minced
- 2 cups red wine
- 2 cups beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- ½ tsp kosher salt
- ¼ tsp black pepper
- 8 oz cremini mushrooms quartered
- 1 cup pearl onions peeled
- 2 tbsp all-purpose flour optional
- 2 tbsp unsalted butter
- Optional: Fresh parsley thyme sprigs
- Suggested Pairings: Red wine mashed potatoes
Preheat the oven to 325°F; pat the beef dry, season with salt and pepper.
Heat oil; cook bacon until crispy; sear beef in batches.
Sauté onion, carrots 5–6 min; add garlic 1 min.
Stir in tomato paste, wine, broth, thyme, bay leaf, bacon, and beef; simmer.
Braise in oven 2–2.5 hrs; add mushrooms, onions; simmer 15–20 min.
Taste and adjust; serve in a white ceramic Dutch oven with parsley.
