Ingredients

–5 lb center-cut beef tenderloin
trimmed & tied

tbsp
olive oil
2
tbsp
kosher salt
1
tbsp
black pepper
6
cloves
garlic
minced
2
tbsp
chopped rosemary
2
tbsp
chopped thyme
Instructions
Pat dry; rub with oil + herb mixture.
Rest 1–2 hours at room temp.
Sear all sides in a hot skillet.
Roast 425°F 25–35 min to 125°F internal.
Rest tented 20 min.
Slice and serve.
