Juicy, herb-crusted whole beef tenderloin roast

Ingredients
  

  • 4 –5 lb center-cut beef tenderloin trimmed & tied
  • 2 tbsp olive oil
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 6 cloves garlic minced
  • 2 tbsp chopped rosemary
  • 2 tbsp chopped thyme

Instructions
 

  • Pat dry; rub with oil + herb mixture.
  • Rest 1–2 hours at room temp.
  • Sear all sides in a hot skillet.
  • Roast 425°F 25–35 min to 125°F internal.
  • Rest tented 20 min.
  • Slice and serve.

• Thermometer = perfect doneness
• Tie for even shape
