Beet Salad Recipe: Vibrant, Earthy

Best roasted beet salad—sweet beets, goat cheese, walnuts, and balsamic vinaigrette. Vibrant make-ahead side!

Ingredients
  

  • 6 medium beets
  • 5 oz baby arugula
  • 4 oz goat cheese crumbled
  • ½ cup toasted walnuts
  • ¼ red onion thinly sliced
  • ¼ cup olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Instructions
 

  • Roast wrapped beets at 400°F for 50–70 min.
  • Peel and slice cooled beets.
  • Whisk vinaigrette.
  • Toss greens with half the dressing.
  • Layer beets, cheese, nuts, and onion.
  • Drizzle remaining dressing.

• Roast ahead—better next day
• Golden beets = no bleeding
