crumbled

toasted walnuts

red onion
thinly sliced

olive oil

balsamic vinegar

Dijon mustard
Instructions
Roast wrapped beets at 400°F for 50–70 min.
Peel and slice cooled beets.
Whisk vinaigrette.
Toss greens with half the dressing.
Layer beets, cheese, nuts, and onion.
Drizzle remaining dressing.
