Ingredients
  

  • Chicken:
  • 4 boneless skinless chicken breasts or thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Mediterranean Base:
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • ½ red onion sliced
  • ½ cup kalamata olives
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • Finishing:
  • 2 tbsp lemon juice
  • 2 tbsp parsley chopped
  • ½ cup feta cheese

Instructions
 

  • Pat chicken dry and trim if needed.
  • Season chicken with salt, pepper, and paprika.
  • Heat oil in skillet over medium-high heat.
  • Sear chicken until golden on both sides.
  • Cook onion, then add garlic until fragrant.
  • Add tomatoes, olives, and herbs.
  • Return chicken to the skillet.
  • Cook until chicken is fully done.
  • Add lemon juice, parsley, and feta.
  • Serve hot with desired sides.

Notes

Do not overcook chicken
Use fresh lemon for the best flavor
Thighs stay juicier than breasts
