Ingredients
Chicken:

boneless skinless chicken breasts or thighs

Mediterranean Base:

garlic

cherry tomatoes
halved

red onion
sliced

kalamata olives

Finishing:

lemon juice

feta cheese
Instructions
Pat chicken dry and trim if needed.
Season chicken with salt, pepper, and paprika.
Heat oil in skillet over medium-high heat.
Sear chicken until golden on both sides.
Cook onion, then add garlic until fragrant.
Add tomatoes, olives, and herbs.
Return chicken to the skillet.
Cook until chicken is fully done.
Add lemon juice, parsley, and feta.
Serve hot with desired sides.
Notes
Do not overcook chicken
Use fresh lemon for the best flavor
Thighs stay juicier than breasts
