Ingredients
  

  • Noodles:
  • 12 oz wide rice noodles
  • Protein:
  • 1 pound chicken beef, shrimp, or tofu
  • Vegetables:
  • 2 cups Chinese broccoli
  • 3 cloves garlic
  • Sauce:
  • 3 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 tsp vinegar
  • Cooking:
  • 2 tbsp oil
  • 2 large eggs
  • Topping Optional:
  • Lime wedges
  • Chili flakes

Instructions
 

  • Prepare noodles according to package directions.
  • Mix sauce ingredients until combined.
  • Slice protein and chop vegetables.
  • Heat wok over high heat.
  • Cook protein until browned and set aside.
  • Cook garlic and vegetables briefly.
  • Scramble eggs in wok.
  • Add noodles and sauce and toss gently.
  • Return protein and cook until lightly charred.
  • Serve hot with toppings.

Notes

Use high heat
Do not overcook noodles
Fresh noodles work best
Cook quickly for a smoky flavor
