15 oz can black beans, rinsed

long-grain white rice
rinsed

vegetable or chicken broth

15 oz can diced tomatoes, drained

Instructions
Heat oil; sauté onion, bell pepper, and garlic for 5–6 min.
Add cumin, paprika, and oregano; cook 1 min.
Add beans, rice, broth, tomatoes, salt, and pepper; simmer 15–20 min.
Stir in lime juice; taste and adjust.
Serve in a white ceramic bowl with cilantro.
Notes
Rinse rice for a fluffy texture.
Store in the fridge for 4 days or freeze for 3 months.
Try a spicy or Cuban-style variation.
Pair with cornbread.
