Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 1 green bell pepper diced
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • 1 15 oz can black beans, rinsed
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable or chicken broth
  • 1 15 oz can diced tomatoes, drained
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp lime juice
  • Optional: Cilantro lime wedges
  • Suggested Pairings: Iced tea avocado slices

Instructions
 

  • Heat oil; sauté onion, bell pepper, and garlic for 5–6 min.
  • Add cumin, paprika, and oregano; cook 1 min.
  • Add beans, rice, broth, tomatoes, salt, and pepper; simmer 15–20 min.
  • Stir in lime juice; taste and adjust.
  • Serve in a white ceramic bowl with cilantro.

Notes

  • Rinse rice for a fluffy texture.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try a spicy or Cuban-style variation.
  • Pair with cornbread.
