Blackberry Cobbler Recipe: Sweet and Rustic

Ingredients
  

Blackberry Filling:

  • 4 cups fresh or frozen blackberries
  • ¾ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp cornstarch
  • ½ tsp vanilla extract

Cobbler Topping:

  • 1 ½ cups all-purpose flour
  • cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 6 tbsp unsalted butter cold, cubed
  • ½ cup milk
  • 1 large egg
  • Optional: Fresh blackberries powdered sugar
  • Suggested Pairings: Ice cream coffee

Instructions
 

  • Preheat oven to 375°F. Grease a 9-inch baking dish.
  • Toss blackberries with sugar, lemon juice, zest, cornstarch, and vanilla. Taste and adjust the sweetness. Pour into a dish.
  • Mix flour, sugar, baking powder, and salt. Cut in butter. Stir in milk and egg.
  • Drop batter over filling. Bake for 35–40 minutes until golden and bubbly.
  • Serve in a white ceramic dish with blackberries, powdered sugar, ice cream, and coffee.

  • Use fresh blackberries for the best flavor.
  • Store in the fridge for 3 days or freeze for 2 months.
