Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs or breasts, cut into pieces
  • 2 tbsp olive oil
  • ¼ cup bourbon or apple juice
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 2 tbsp apple cider vinegar
  • 2 garlic cloves minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch + 2 tbsp water
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes optional
  • Optional: Green onions sesame seeds
  • Suggested Pairings: Iced tea steamed rice

Instructions
 

  • Heat oil; cook chicken 6–8 min; remove from skillet.
  • Add bourbon, soy sauce, sugar, vinegar, garlic, ginger, pepper, and flakes; simmer.
  • Stir in cornstarch slurry; simmer until thickened.
  • Return chicken; toss to coat; taste and adjust.
  • Serve in a white ceramic dish with green onions.

Notes

  • Use thighs for a juicier texture.
  • Store in the fridge for 4 days or freeze for 2 months.
  • Try a gluten-free or spicy variation.
  • Pair with stir-fried vegetables.
