Ingredients
  

  • 4 lbs bone-in beef short ribs
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup dry red wine
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp balsamic vinegar
  • 1 tsp Worcestershire sauce
  • Optional: Fresh parsley thyme
  • Suggested Pairings: Mashed potatoes red wine

Instructions
 

  • Preheat oven to 325°F. Season and sear ribs in olive oil for 3–4 minutes per side; transfer to a plate.
  • Cook onion, carrots, and celery for 5–6 minutes. Add garlic and tomato paste; cook for 1 minute.
  • Add wine, broth, thyme, bay leaves, vinegar, and Worcestershire. Taste and adjust the sauce flavor.
  • Return ribs to pot; braise in oven for 2.5–3 hours until tender.
  • Serve in a white ceramic dish with parsley, potatoes, and wine.

Notes

  • Sear ribs for the best flavor.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try alcohol-free or spicy variations.
  • Pair with polenta.
