Instructions
Mix tomatoes, onion, garlic, basil, oil, vinegar, salt, and pepper; let sit for 15-20 minutes.
Brush baguette with oil; bake at 400°F for 8-10 minutes, flipping halfway. Rub with garlic.
Spoon topping onto toasts; arrange on a platter.
Drizzle with balsamic glaze and garnish with basil; serve with olives and wine.
Notes
Use ripe tomatoes.
Store topping in fridge for 2 days and toasts at room temp for 2 days.
Try a mozzarella variation.
Pair with antipasto.
