Bruschetta Recipe: Fresh and Vibrant

Fresh tomato-basil bruschetta on toasted baguette.

Ingredients
  

  • 4 Roma tomatoes diced
  • ¼ cup red onion chopped
  • 2 cloves garlic minced
  • ¼ cup fresh basil chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp salt
  • ¼ tsp pepper
  • 8 baguette slices
  • 2 tbsp olive oil
  • 1 garlic clove halved
  • Optional: Balsamic glaze basil leaves
  • Suggested Pairings: Olives wine

Instructions
 

  • Mix tomatoes, onion, garlic, basil, oil, vinegar, salt, and pepper; let sit for 15-20 minutes.
  • Brush baguette with oil; bake at 400°F for 8-10 minutes, flipping halfway. Rub with garlic.
  • Spoon topping onto toasts; arrange on a platter.
  • Drizzle with balsamic glaze and garnish with basil; serve with olives and wine.

Notes

  • Use ripe tomatoes.
  • Store topping in fridge for 2 days and toasts at room temp for 2 days.
  • Try a mozzarella variation.
  • Pair with antipasto.
