Buckeyes Recipe: Creamy and Chocolatey

Ingredients
  

  • 1 ½ cups creamy peanut butter
  • ½ cup unsalted butter softened
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  • 3 ½ cups powdered sugar
  • 12 oz semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Optional: Sea salt crushed peanuts
  • Suggested Pairings: Milk coffee

Instructions
 

  • Beat peanut butter, butter, vanilla, and salt; add sugar gradually.
  • Roll into 1-inch balls; freeze for 20–30 minutes with toothpicks.
  • Melt chocolate with oil; dip balls, leaving a circle exposed.
  • Refrigerate for 15–20 minutes to set.
  • Serve on a white ceramic platter.

Notes

  • Use conventional peanut butter.
  • Store in the fridge for 2 weeks or freeze for 3 months.
  • Try a dark chocolate or crunchy variation.
  • Pair with hot cocoa.
