Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 1 carrot diced
  • 4 cups chopped cabbage
  • 1 15 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 4 cups beef broth
  • ½ cup uncooked rice
  • 1 tbsp Worcestershire
  • 1 tsp paprika thyme
  • 1 bay leaf
  • ½ tsp salt ¼ tsp pepper
  • Optional: Sour cream parsley
  • Suggested Pairings: Red wine crusty bread

Instructions
 

  • Brown beef in oil; drain fat.
  • Add onion, garlic, and carrot; cook for 4–5 minutes.
  • Stir in cabbage, tomatoes, and sauce.
  • Add broth, rice, and seasonings; simmer for 25–30 minutes.
  • Remove the bay leaf; taste and adjust.
  • Serve in a white ceramic bowl with sour cream.

Notes

  • Use lean beef.
  • Store in the fridge for 5 days or freeze for 3 months.
  • Try a vegetarian or slow cooker variation.
  • Pair with dinner rolls.
