Ingredients
  

  • ¼ cup olive oil
  • 3 tbsp lemon juice
  • 2 tbsp soy sauce
  • 1 tbsp balsamic
  • 2 tbsp brown sugar
  • 2 garlic cloves
  • 1 tsp Dijon
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp oregano
  • ¼ tsp red pepper flakes
  • Optional: Parsley lemon
  • Suggested Pairings: Veggies rice

Instructions
 

  • Whisk all marinade ingredients.
  • Pound 4 chicken breasts to ¾-inch.
  • Place in bag; add marinade.
  • Marinate 30 min–8 hrs in fridge.
  • Pat dry; cook to 165°F.
  • Rest 5 min.
  • Serve on a white ceramic platter.

Notes

  • Don’t marinate for over 8 hrs.
  • Store marinade 1 week; cooked chicken 4 days.
  • Try a citrus or yogurt variation.
  • Pair with grilled asparagus.
