Instructions
Melt butter; cook onion, carrots, and celery for 5-7 minutes. Add garlic for 1 min.
Stir in flour for 1 min; whisk in broth. Add chicken, thyme, salt, and pepper.
Simmer for 15-20 min; shred chicken.
Add cream and peas; simmer for 5 min.
Garnish with parsley; serve with bread, salad.
Notes
Dice vegetables evenly.
Store in fridge for 4 days, freeze for 3 months.
Try a vegetarian variation.
