Chicken Spaghetti Casserole Recipe: Creamy & Cheesy

Creamy, cheesy Southern chicken spaghetti casserole with Rotel

Ingredients
  

  • 1 lb spaghetti broken into thirds
  • 3 –4 cups cooked shredded chicken
  • 1 onion + 1 bell pepper diced
  • 3 cloves garlic
  • 1 can Rotel undrained
  • 1 can cream of mushroom + 1 can cream of chicken soup
  • 2 cups chicken broth
  • 3 cups shredded cheddar divided
  • ½ cup Parmesan
  • Ritz cracker or panko topping

Instructions
 

  • Cook spaghetti 2 min shy of al dente.
  • Sauté onion, pepper, and garlic.
  • Mix in Rotel, soups, broth, and cheeses.
  • Combine with spaghetti + chicken.
  • Layer in a 9×13 dish with cheese in the middle & on top.
  • Top with buttered crumbs; bake at 350°F 35–40 min.
