- 1 lb boneless skinless chicken breasts
- 1 tbsp olive oil
- 1 medium onion diced
- 2 medium carrots sliced
- 2 celery stalks sliced
- 3 cloves garlic minced
- 6 cups chicken broth
- 1 can 14.5 oz diced tomatoes, drained
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp kosher salt
- ¼ tsp black pepper
- 9 oz fresh or frozen cheese tortellini
- 2 cups fresh spinach chopped
- Optional: Fresh parsley Parmesan shavings
- Suggested Pairings: White wine crusty bread
Heat oil; cook chicken 5–6 min per side; shred.
Sauté onion, carrots, and celery 5–7 min; add garlic 1 min.
Add broth, tomatoes, thyme, basil, salt, and pepper; simmer; taste and adjust.
Add tortellini and chicken; simmer 4–6 min.
Stir in spinach; cook 1–2 min.
Serve in a white ceramic tureen with parsley, Parmesan, wine, and bread.
