- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 1 15 oz can kidney beans, drained
- 1 15 oz can diced tomatoes, with juice
- 1 8 oz can tomato sauce
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp cayenne pepper optional
- 1 tsp kosher salt
- ½ tsp black pepper
- Optional: 1 jalapeño diced
- For Serving:
- Optional: Cheddar cheese sour cream, green onions, cilantro
- Suggested Sides: Cornbread tortilla chips, rice
Heat oil in a pot; brown beef, drain fat.
Add onion, bell pepper, optional jalapeño; cook 5 minutes. Add garlic for 1 minute.
Stir in chili powder, cumin, paprika, oregano, optional cayenne, salt, pepper; cook 1-2 minutes.
Add beans, tomatoes, tomato sauce, broth; simmer 30-45 minutes.
Serve hot with optional toppings; pair with cornbread or rice.
