Ingredients
  

  • Chipotle Marinade:
  • 2 chipotle peppers in adobo sauce chopped
  • 2 tbsp adobo sauce
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Chicken:
  • 4 boneless skinless chicken breasts
  • Cooking:
  • 1 tbsp olive oil
  • Optional: Cilantro lime wedges
  • Suggested Pairings: Mexican rice margarita

Instructions
 

  • Blend chipotle peppers, adobo sauce, oil, lime juice, honey, garlic, spices. Taste and adjust the seasoning.
  • Marinate chicken in mixture for 1–6 hours in fridge.
  • Grill or sear chicken in oil over medium-high heat, 5–7 minutes per side (165°F internal). Rest 5 minutes.
  • Serve on a white ceramic platter with cilantro, lime, rice, and margarita.

Notes

  • Marinate longer for bolder flavor.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try low-spice or vegan variations.
  • Pair with tortillas.
