Chipotle Cilantro Lime Rice Recipe: Bright and Flavorful

Zesty cilantro lime rice inspired by Chipotle.

Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water or broth
  • 1 tbsp olive oil
  • ½ tsp salt
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • ¼ cup cilantro
  • 1 garlic clove
  • Optional: Extra cilantro lime wedges
  • Suggested Pairings: Tacos margarita

Instructions
 

  • Rinse rice until the water runs clear.
  • Heat oil in saucepan; toast rice 1 min.
  • Add water, salt; boil, then simmer 15-18 min.
  • Fluff rice; toss with lime juice, zest, cilantro, and garlic.
  • Serve with tacos and margaritas.

Notes

  • Use fresh lime juice.
  • Store in the fridge for up to 4 days, freeze for 2 months.
