Ingredients
  

  • Churro Crust:
  • 1 cup 2 sticks unsalted butter, melted
  • 1 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 2 sleeves graham crackers about 18 full sheets, crushed
  • ¼ tsp kosher salt
  • Cheesecake Filling:
  • 24 oz 3 blocks full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream
  • ¼ cup heavy cream
  • 2 tsp vanilla extract
  • 1 tbsp all-purpose flour optional, for extra stability
  • Cinnamon-Sugar Topping:
  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon
  • Caramel Drizzle:
  • ½ cup caramel sauce store-bought or homemade

Instructions
 

  • Make cinnamon-sugar crust; bake.
  • Beat cheesecake filling.
  • Pour over crust.
  • Sprinkle cinnamon sugar topping.
  • Bake at 325°F 50–60 min.
  • Chill overnight.
  • Drizzle caramel; cut.
