Coconut Cream Pie Recipe: Silky, Toasted

Silky coconut custard pie with flaky crust and toasted coconut.

Ingredients
  

  • Pie crust store-bought or homemade
  • 2 cups milk + 1 cup coconut milk
  • ¾ cup sugar
  • cup cornstarch
  • 4 egg yolks
  • Butter + vanilla + coconut extract
  • 1 cup toasted coconut
  • Whipped cream topping

Instructions
 

  • Blind bake crust.
  • Make coconut custard; strain and cool.
  • Pour into crust; chill 4+ hours.
  • Top with whipped cream + toasted coconut.
  • Slice and serve.

Notes

• Chill fully for clean slices
• Fresh coconut milk = best flavor
• Freezes okay (without whipped cream)
• Try chocolate or no-bake variation
