Coconut Rice Recipe: Creamy and Tropical

Ingredients
  

  • 1 ½ cups jasmine rice
  • 1 cup canned coconut milk
  • 1 cup water
  • ½ tsp kosher salt
  • 1 tbsp granulated sugar optional
  • Optional: Toasted coconut flakes chopped cilantro
  • Suggested Pairings: Grilled chicken mango smoothie

Instructions
 

  • Rinse rice until water runs clear; drain.
  • Combine rice, coconut milk, water, salt, and sugar in a saucepan; boil, then simmer 15–18 min.
  • The rest is 5 minutes, and the fluff is with a fork.
  • Taste and adjust seasoning.
  • Toast coconut flakes (optional).
  • Serve in a white ceramic bowl with coconut, cilantro, chicken, and smoothie.

Notes

  • Use full-fat coconut milk for richness.
  • Store in the fridge for 4 days or freeze for 2 months.
  • Try coconut lime or savory variation.
  • Pair with shrimp curry.
