Ingredients
  

  • 15 oz can whole kernel corn drained
  • 15 oz can cream-style corn
  • 8.5 oz box of cornbread mix
  • 1 cup sour cream
  • ½ cup butter melted
  • 2 large eggs
  • 1 cup shredded cheddar divided
  • ¼ tsp salt
  • ¼ tsp pepper
  • Optional: Chives
  • Suggested Pairings: Turkey iced tea

Instructions
 

  • Preheat the oven to 350°F; grease an 8x8-inch dish.
  • Whisk corn, sour cream, butter, and eggs in a bowl.
  • Stir in cornbread mix, 1/2 cup cheese, salt, and pepper.
  • Pour into the dish and top with 1/2 cup cheese.
  • Bake for 40-45 minutes until golden. Cool for 5-10 minutes.
  • Garnish with chives; serve with turkey and tea.

Notes

  • Drain corn well.
  • Store in the fridge for 4 days or freeze for 2 months.
  • Try a spicy variation.
  • Pair with green beans.
