Instructions
Preheat the oven to 350°F; grease an 8x8-inch dish.
Whisk corn, sour cream, butter, and eggs in a bowl.
Stir in cornbread mix, 1/2 cup cheese, salt, and pepper.
Pour into the dish and top with 1/2 cup cheese.
Bake for 40-45 minutes until golden. Cool for 5-10 minutes.
Garnish with chives; serve with turkey and tea.
Notes
Drain corn well.
Store in the fridge for 4 days or freeze for 2 months.
Try a spicy variation.
