Ingredients
Cornbread:

cornmeal
1
cup
flour
¼
cup
sugar

tbsp
baking powder

tsp
baking soda
½
tsp
salt

buttermilk

eggs
½
cup
melted butter

tbsp
vegetable oil
Optional: Butter

Instructions
Preheat oven to 425°F; heat 8x8 pan or 9-inch skillet with 2 tbsp oil.
Whisk cornmeal, flour, sugar, baking powder, baking soda, and salt.
Whisk buttermilk, eggs, and melted butter in another bowl.
Combine wet and dry ingredients; stir until just mixed.
Pour into hot pan; bake 18-22 min (skillet) or 20-25 min (pan).
Cool 5-10 min; serve with butter, chili.
Notes
Use medium-grind cornmeal.
Store at room temperature up to 2 days.
Try a cheesy variation.
Pair with milk.
