Cornbread Recipe: Golden and Moist

Golden Southern-style cornbread with a moist crumb.

Ingredients
  

  • Cornbread:
  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • ½ cup melted butter
  • 2 tbsp vegetable oil
  • Optional: Butter honey
  • Suggested Pairings: Chili fried chicken, sweet tea

Instructions
 

  • Preheat oven to 425°F; heat 8x8 pan or 9-inch skillet with 2 tbsp oil.
  • Whisk cornmeal, flour, sugar, baking powder, baking soda, and salt.
  • Whisk buttermilk, eggs, and melted butter in another bowl.
  • Combine wet and dry ingredients; stir until just mixed.
  • Pour into hot pan; bake 18-22 min (skillet) or 20-25 min (pan).
  • Cool 5-10 min; serve with butter, chili.

Notes

  • Use medium-grind cornmeal.
  • Store at room temperature up to 2 days.
  • Try a cheesy variation.
  • Pair with milk.
