Cowboy Caviar Recipe: Fresh and Zesty

Fresh Cowboy Caviar with zesty lime dressing.

Ingredients
  

  • 1 15 oz can black beans, drained
  • 1 15 oz can black-eyed peas, drained
  • 1 15 oz can of corn kernels, drained
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • ½ red onion diced
  • 1 jalapeño minced (optional)
  • ¼ cup fresh cilantro chopped
  • 2 avocados diced (optional)
  • ¼ cup olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp red wine vinegar
  • 1 tsp ground cumin
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp chili powder optional
  • Optional: Cilantro lime wedges
  • Suggested Pairings: Tortilla chips iced tea

Instructions
 

  • Prep beans, corn, tomatoes, bell pepper, onion, jalapeño, and cilantro.
  • Whisk olive oil, lime juice, vinegar, cumin, salt, pepper, and chili powder.
  • Combine all ingredients in a bowl; toss with dressing.
  • Add avocado (if using); chill for 30 minutes (optional).
  • Serve in a white ceramic bowl with cilantro, chips, and tea.

Notes

  • Add avocado just before serving.
  • Store in the fridge for 3-4 days; don’t freeze.
  • Try a spicy variation.
  • Pair with pita chips.
