- 1 cup coarse cornmeal
- 4 cups water or 2 cups water + 2 cups milk
- 1 tsp salt
- 2 tbsp unsalted butter
- ½ cup grated Parmesan cheese
- ¼ tsp black pepper
- Optional: Fresh parsley thyme, olive oil

Boil water (or water and milk) with salt in a saucepan.
Whisk in cornmeal slowly; reduce heat to low.
