Ingredients
  

  • 1 cup coarse cornmeal
  • 4 cups water or 2 cups water + 2 cups milk
  • 1 tsp salt
  • 2 tbsp unsalted butter
  • ½ cup grated Parmesan cheese
  • ¼ tsp black pepper
  • Optional: Fresh parsley thyme, olive oil
  • Suggested Pairings: Roasted vegetables red wine

Instructions
 

  • Boil water (or water and milk) with salt in a saucepan.
  • Whisk in cornmeal slowly; reduce heat to low.
  • Simmer, stirring, for 25–30 minutes until creamy; add liquid if needed.
  • Stir in butter, Parmesan, and pepper; taste and adjust the seasoning.
  • Serve in white ceramic bowls with parsley, olive oil, vegetables, and wine.

  • Whisk slowly to avoid lumps.
  • Store in the fridge for 3 days or freeze for 2 months.
