Ingredients
  

  • 1 lb Italian sausage
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 2 medium carrots sliced
  • 2 celery stalks diced
  • 4 cups chicken or vegetable broth
  • 1 15 oz can diced tomatoes, drained
  • 1 tsp dried Italian seasoning
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 9 oz package cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale
  • Optional: Parsley Parmesan
  • Suggested Pairings: White wine crusty bread

Instructions
 

  • Cook sausage in olive oil until browned; remove excess fat.
  • Sauté onion, garlic, carrots, and celery for 5–6 min.
  • Add broth, tomatoes, seasoning, salt, and pepper; simmer 10 min.
  • Add tortellini and cream; simmer 3–5 min; stir in spinach.
  • Taste and adjust; serve in a white ceramic bowl with parsley.

Notes

  • Use fresh tortellini for the best texture.
  • Store in the fridge for 3 days or freeze (without tortellini) for 3 months.
  • Try a gluten-free or spicy variation.
  • Pair with garlic bread.
