- 1 lb Italian sausage
- 1 tbsp olive oil
- 1 medium onion diced
- 2 garlic cloves minced
- 2 medium carrots sliced
- 2 celery stalks diced
- 4 cups chicken or vegetable broth
- 1 15 oz can diced tomatoes, drained
- 1 tsp dried Italian seasoning
- ½ tsp kosher salt
- ¼ tsp black pepper
- 1 9 oz package cheese tortellini
- 1 cup heavy cream
- 2 cups fresh spinach or kale
- Optional: Parsley Parmesan
- Suggested Pairings: White wine crusty bread
Cook sausage in olive oil until browned; remove excess fat.
Sauté onion, garlic, carrots, and celery for 5–6 min.
Add broth, tomatoes, seasoning, salt, and pepper; simmer 10 min.
Add tortellini and cream; simmer 3–5 min; stir in spinach.
Taste and adjust; serve in a white ceramic bowl with parsley.
