Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup heavy cream
  • ½ cup chicken broth
  • cup sun-dried tomatoes chopped
  • 2 cups fresh spinach chopped
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • Optional: Fresh basil parsley
  • Suggested Pairings: Pasta white wine

Instructions
 

  • Season chicken with salt, pepper, garlic powder, and Italian seasoning; taste and adjust the seasoning.
  • Heat oil in skillet; cook chicken for 5–7 minutes per side until 165°F. Remove and keep warm.
  • In a skillet, cook garlic and tomato paste for 1 minute; add cream, broth, tomatoes, and Parmesan. Simmer for 3–5 minutes.
  • Add spinach until wilted; taste and adjust the sauce. Return chicken, coat with sauce, and simmer for 2–3 minutes.
  • Serve on a white ceramic platter with basil, pasta, and wine.

Notes

  • Use thighs for juiciness.
  • Store in the fridge for 3 days or freeze for 2 months (without spinach).
  • Try vegan or spicy variations.
  • Pair with crusty bread.
