Instructions
Season chicken with salt, pepper, garlic powder, and Italian seasoning; taste and adjust the seasoning.
Heat oil in skillet; cook chicken for 5–7 minutes per side until 165°F. Remove and keep warm.
In a skillet, cook garlic and tomato paste for 1 minute; add cream, broth, tomatoes, and Parmesan. Simmer for 3–5 minutes.
Add spinach until wilted; taste and adjust the sauce. Return chicken, coat with sauce, and simmer for 2–3 minutes.
Serve on a white ceramic platter with basil, pasta, and wine.
Notes
Use thighs for juiciness.
Store in the fridge for 3 days or freeze for 2 months (without spinach).
Try vegan or spicy variations.
Pair with crusty bread.
