Ingredients
  

  • 2 cups heavy cream
  • 4 large egg yolks
  • cup granulated sugar
  • 1 tsp vanilla extract or 1 vanilla bean
  • ¼ tsp kosher salt
  • 4 tbsp granulated sugar for topping
  • Optional: Berries mint
  • Suggested Pairings: Coffee dessert wine

Instructions
 

  • Preheat oven to 325°F; place 4 ramekins in a baking dish.
  • Heat cream with vanilla until simmering; cool slightly.
  • Whisk yolks, sugar, and salt; slowly add cream.
  • Strain and pour into ramekins; bake in a water bath for 35-40 minutes.
  • Chill for 4 hours; sprinkle sugar, torch until caramelized.
  • Garnish with berries; serve with coffee and wine.

Notes

  • Temper eggs to avoid curdling.
  • Store in the fridge for 3 days; don’t freeze.
  • Try a chocolate variation.
  • Pair with biscotti.
