large egg yolks

vanilla extract
or 1 vanilla bean

Instructions
Preheat oven to 325°F; place 4 ramekins in a baking dish.
Heat cream with vanilla until simmering; cool slightly.
Whisk yolks, sugar, and salt; slowly add cream.
Strain and pour into ramekins; bake in a water bath for 35-40 minutes.
Chill for 4 hours; sprinkle sugar, torch until caramelized.
Garnish with berries; serve with coffee and wine.
Notes
Temper eggs to avoid curdling.
Store in the fridge for 3 days; don’t freeze.
Try a chocolate variation.
