Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 15 oz can kidney beans, drained
  • 1 15 oz can black beans, drained
  • 1 28 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper optional
  • 1 cup beef or vegetable broth
  • Optional: Shredded cheddar sour cream, green onions
  • Suggested Pairings: Cornbread iced tea

Instructions
 

  • Brown beef in a skillet for 5–7 min; drain fat.
  • Add beef, onion, garlic, bell pepper, beans, tomatoes, tomato sauce, spices, and broth to a slow cooker; stir.
  • Cook on low 6–8 hours or high 3–4 hours.
  • Taste and adjust seasoning.
  • Serve in a white ceramic bowl with cheddar, sour cream, green onions, cornbread, and tea.

Notes

  • Brown beef for better flavor.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try a vegetarian or spicy variation.
  • Pair with tortilla chips.
