- 1 lb ground beef
- 1 medium onion diced
- 2 cloves garlic minced
- 1 red bell pepper diced
- 1 15 oz can kidney beans, drained
- 1 15 oz can black beans, drained
- 1 28 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp kosher salt
- ¼ tsp black pepper
- ¼ tsp cayenne pepper optional
- 1 cup beef or vegetable broth
- Optional: Shredded cheddar sour cream, green onions
- Suggested Pairings: Cornbread iced tea
Brown beef in a skillet for 5–7 min; drain fat.
Add beef, onion, garlic, bell pepper, beans, tomatoes, tomato sauce, spices, and broth to a slow cooker; stir.
Cook on low 6–8 hours or high 3–4 hours.
Taste and adjust seasoning.
Serve in a white ceramic bowl with cheddar, sour cream, green onions, cornbread, and tea.
