Crockpot Ham and Bean Soup Recipe: Hearty and Comforting

Hearty crockpot soup with ham and navy beans.

Ingredients
  

  • 1 lb dried navy beans
  • 2 cups diced ham
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 bay leaf
  • 1 tsp thyme
  • ½ tsp black pepper
  • 6 cups chicken broth
  • 1 cup water
  • 1 tbsp apple cider vinegar
  • Optional: Parsley black pepper
  • Suggested Pairings: Crusty bread iced tea

Instructions
 

  • Rinse beans; soak overnight (optional).
  • Add beans, ham, vegetables, spices, broth, and water to the crockpot.
  • Cook on low 8-10 hours or high 5-6 hours.
  • Remove bay leaf; add vinegar, and salt to taste.
  • Serve in earthenware bowls with parsley, bread, and iced tea.

Notes

  • Soak beans for quicker cooking.
  • Store in fridge up to 5 days, freeze 3 months.
  • Try a vegan variation.
  • Pair with cornbread.
