Ingredients
  

  • 3 lb London broil
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp cornstarch optional
  • 1 large onion sliced
  • 2 cups baby carrots
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • Optional: Parsley thyme sprigs
  • Suggested Pairings: Mashed potatoes red wine

Instructions
 

  • Rub beef with oil, salt, pepper, garlic powder, onion powder, and thyme; sear (optional).
  • Whisk broth, Worcestershire, soy sauce, vinegar, and cornstarch (if using); taste and adjust.
  • Place onion, carrots, mushrooms, and garlic in crockpot; top with beef and sauce.
  • Cook on low 7–8 hours or high 4–5 hours (145°F–160°F internal).
  • Rest beef 10 min; slice against the grain.
  • Serve on a white ceramic platter with parsley, potatoes, and wine.
