- 1 lb dried pinto beans rinsed
- 6 cups water or broth
- 1 medium onion diced
- 3 cloves garlic minced
- 1 smoked ham hock or 1 tsp liquid smoke
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika optional
- 1 bay leaf
- ½ tsp kosher salt
- ¼ tsp black pepper
- Optional: Chopped cilantro green onions
- Suggested Pairings: Sweet tea cornbread
Rinse and sort beans; optionally, soak overnight.
Add beans, water/broth, onion, garlic, ham hock, spices, and bay leaf to the slow cooker.
Cook on low for 8–10 hr or high for 5–6 hr until tender.
Remove ham hock, bay leaf; taste and adjust seasoning.
Serve in a white ceramic bowl with cilantro, cornbread, and tea.
