Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs
  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • ¼ cup brown sugar packed
  • 2 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp sesame oil
  • ¼ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Optional: Sliced green onions sesame seeds
  • Suggested Pairings: White rice green tea

Instructions
 

  • Whisk soy sauce, honey, brown sugar, vinegar, garlic, ginger, sesame oil, and pepper.
  • Place chicken in a slow cooker; pour sauce over.
  • Cook on low for 4–5 hours or high for 2–3 hours.
  • Remove chicken; thicken sauce with cornstarch slurry.
  • Shred chicken; taste and adjust sauce. Serve in a white ceramic bowl with green onions, sesame seeds, rice, and tea.

  • Use fresh ginger for the best flavor.
  • Store in the fridge for 4 days or freeze for 3 months.
  • Try a spicy or vegetarian variation.
