Dirty Rice Recipe: Savory and Spicy

Classic Cajun Dirty Rice with savory, spicy flavor.

Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ lb ground pork or beef
  • ½ lb chicken livers finely chopped (optional)
  • 1 tbsp vegetable oil
  • 1 medium onion finely chopped
  • 1 green bell pepper finely chopped
  • 2 celery stalks finely chopped
  • 2 cloves garlic minced
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • ¼ tsp cayenne pepper optional
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped green onions
  • Optional: Green onions parsley
  • Suggested Pairings: Cornbread iced tea

Instructions
 

  • Cook rice in chicken broth for 15–20 min; set aside.
  • Heat oil; cook meat and livers (if using) for 5–7 min.
  • Add onion, bell pepper, celery, and garlic; cook 5 min.
  • Stir in seasonings; cook 1 min. Taste and adjust seasoning.
  • Add rice; stir and cook 2–3 min.
  • Stir in green onions. Serve in a white ceramic bowl with parsley, cornbread, and tea.

Notes

  • Omit livers for a milder flavor.
  • Store in fridge for 3 days or freeze for 2 months.
  • Try a vegetarian or spicy variation.
  • Pair with hot sauce.
