Ingredients
  

  • 4 cups broccoli florets
  • 1 10.5 oz can cream of mushroom soup
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 cup shredded cheddar divided
  • 1 large egg beaten
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 1 cup crushed crackers or panko
  • 2 tbsp melted butter
  • Optional: Extra cheese parsley
  • Suggested Pairings: White wine roasted chicken

Instructions
 

  • Preheat the oven to 350°F; grease a 2-quart baking dish.
  • Blanch fresh broccoli for 2–3 min; drain.
  • Mix soup, mayo, sour cream, 3/4 cup cheese, egg, and seasonings; stir in broccoli; taste and adjust.
  • Transfer to a dish; top with remaining cheese.
  • Mix crackers with butter; sprinkle on top.
  • Bake for 30–35 minutes until golden.
  • Serve in a white ceramic dish with parsley.

Notes

  • Use frozen broccoli for ease.
  • Store in the fridge for 4 days or freeze for 2 months.
  • Try a gluten-free or bacon variation.
  • Pair with mashed potatoes.
