Easy Cheesy Potatoes Recipe: Creamy and Golden

Easy Cheesy Potatoes with a creamy, golden taste.

Ingredients
  

  • 2 lbs diced russet potatoes
  • 1 can of cream of chicken soup
  • 1 cup sour cream
  • ½ cup milk
  • 2 cups shredded cheddar
  • ½ cup diced onion
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup crushed cornflakes
  • 2 tbsp melted butter
  • Optional: Parsley
  • Suggested Pairings: Ham iced tea

Instructions
 

  • Parboil potatoes for 5 minutes; drain.
  • Mix soup, sour cream, milk, 1 ½ cups cheese, onion, and seasonings.
  • Fold in potatoes; transfer to a 9x13 dish.
  • Top with the remaining cheese.
  • Mix cornflakes with butter; sprinkle on top.
  • Bake covered for 30 minutes, uncovered for 15–20 minutes at 350°F.
  • Serve in a white ceramic baking dish.

Notes

  • Parboil for tenderness.
  • Store in the fridge for 4 days or freeze for 2 months.
  • Try a loaded or hash brown variation.
  • Pair with green beans.
