Easy Japchae Recipe: Sweet and Bouncy

Ingredients
  

  • 8 oz sweet potato noodles
  • ½ lb beef optional
  • 1 carrot
  • 1 onion
  • 4 oz spinach
  • 4 shiitake
  • 1 bell pepper
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 1 tsp sesame seeds
  • Optional: Scallions
  • Suggested Pairings: Kimchi rice

Instructions
 

  • Boil noodles 6–7 min; rinse and cut.
  • Whisk soy, sugar, and sesame oil.
  • Stir-fry beef and garlic for 2 min.
  • Stir-fry veggies 3–4 min.
  • Add noodles and sauce; toss 2–3 min.
  • Finish with sesame seeds.
  • Serve in a white ceramic bowl.

Notes

  • Rinse noodles cold.
  • Store in fridge 4 days or freeze 2 months.
  • Try a vegetarian or spicy variation.
  • Pair with barley tea.
