Egg Fried Rice Recipe: Quick and Flavorful

Ingredients
  

  • 3 cups cooked white rice chilled
  • 3 large eggs
  • 2 tbsp vegetable oil
  • ½ cup peas and carrots
  • ¼ cup green onions
  • 2 cloves of garlic
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • ¼ tsp white pepper
  • ¼ tsp salt optional
  • Optional: Extra green onions
  • Suggested Pairings: Egg foo young jasmine tea

Instructions
 

  • Scramble eggs in 1 tbsp oil; remove and break into pieces.
  • Sauté garlic, peas, carrots, and green onions in remaining oil.
  • Add rice; stir-fry 3-4 min until crispy.
  • Add eggs, soy sauce, sesame oil, pepper, salt; stir-fry 1-2 min.
  • Garnish with green onions; serve with egg foo young, tea.

Notes

  • Use day-old rice for the best texture.
  • Store in fridge up to 3 days, freeze 1 month.
  • Try a shrimp variation.
  • Pair with spring rolls.
