Ingredients
  

  • Egg Salad:
  • 6 large eggs
  • ¼ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp chopped celery
  • 1 tbsp chopped red onion
  • 1 tsp fresh lemon juice
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp paprika optional
  • Sandwich:
  • 8 slices soft white or whole wheat bread
  • 4 lettuce leaves
  • Optional: Chopped chives pickle slices
  • Suggested Pairings: Iced tea lemonade

Instructions
 

  • Boil eggs for 10–12 min; cool in ice bath, peel, and chop.
  • Mix eggs, mayonnaise, mustard, celery, onion, lemon juice, salt, pepper, and paprika.
  • Taste and adjust seasoning.
  • Spread egg salad on bread, add lettuce, and top with another slice.
  • Serve on a white ceramic platter with chives, pickles, tea, and lemonade.

Notes

  • Cool eggs for easy peeling.
  • Store egg salad in the fridge for 3 days; assemble fresh.
  • Try a vegan or spicy variation.
