large egg yolks

whole milk

heavy cream

vanilla extract

Instructions
Whisk yolks and sugar until pale.
Heat milk, cream, spices, and salt until simmering.
Temper eggs with hot milk; return to saucepan.
Cook to 160°F, stirring, for 5-8 minutes; don’t boil.
Stir in vanilla and bourbon; strain and chill for 2 hours.
Garnish with whipped cream and nutmeg; serve with cookies and coffee.
Notes
Cook to 160°F for safety.
Store in the fridge for 3-5 days; don’t freeze.
